FORTNIGHT 3 – $60 MENU

We are going to turn our attention to beans.  Purists say that dried beans are cheaper and this might be the case, but you do have to factor in the cost of cooking the beans.  If it takes you 45 minutes to cook them, then there is no real saving because your electricity costs will be higher.

In addition some isolated places might only have the tinned variety available.  Anyway I have decided to use tins of beans, if you have better luck with the dried variety please comment.

Once again baby spinach dominates and this is because in many ways it is one of the most versatile vegetables around.  It is high in iron and can form the base for salads, casseroles or as a separate vegetable.

I have to say that I think the cooking a whole-lot in-one-go is not actually as economic as cooking a large number of very small meals, but the electricity factor could also be relevant.

Anyway here we go, with our bean-based menu.

WEEK 1

Do ahead: Make the Low Fat Lemon Curd and Chole Chaat on the Weekend

Breakfasts:  Monday to Friday: Semolina Saturday: Semolina Pancakes & Honey: Sunday: Parmesan Monkey Bread

Lunches: Pikelets & Lemon Curd; Chicken Sandwiches

Dinner

Monday: Chole Chaat with Chapatis

Tuesday: Baked Chicken & Lemon with Steamed Spinach

Wednesday: Crispy Potato & Bacon Salad

Thursday:  Smoky Bacon and Bean Pasta

Friday:  Potato & Lentil Curry

Saturday: Chicken & Mushroom Pasta

Sunday: Chole Chaat

WEEK 2

Do ahead: Make the Potato Soup and Poppy Seed Pretzels on the weekend.

Breakfasts:  Monday to Friday: Semolina Saturday Bread & Butter Custard

Sunday: Baked Hash Browns.

Lunches: Parmesan Monkey Bread, Smokey Bacon & Bean Pasta, Potato Soup

Dinners

Monday: Potato & Lentil Curry

Tuesday:  Spinach & Pasta Bake

Wednesday: Potato Soup & Poppy Seed Pretzels

Thursday:  Chole Chaat

Friday:  Potato & Lentil Curry

Saturday: Potato Soup & Poppy Seed Pretzels

Sunday: Spinach & Pasta Bake
