BAKED EGGS WITH SPINACH & MUSHROOMS

2 eggs

1/2 cup spinach (packed tight)

4 mushrooms (thinly sliced)

1 tbspn butter

salt and freshly ground black pepper to taste

METHOD

1.  Preheat oven to 180C .  Butter two oven-proof ramekins.  Place sliced mushrooms in the bottom of each ramekin.  Place chopped spinach on top of mushrooms and a small amount of butter on top of spinach.  

2.  Place in 180 C oven for 15-20 minutes until mushrooms are fried and spinach wilted.  Take out of oven.

3.  Crack an egg onto the spinach and put back in the oven for 3-5 minutes.  Check them after 3 minutes to see if they are done. Sprinkle with pepper and salt before serving.

Serves 2
