RED SALAD

Look for red vegetables and fruits when you are thinking anti-oxidants.  This is adapted from Nigella Lawson’s take on an anti-oxidant rich salad.

1 can red kidney beans (drained and rinsed)

1 cup fresh tomatoes (chopped)

½  cup dried cranberries

1/2 red onion finely sliced

1/4 cup cranberry juice

1 tbspn olive oil

freshly ground black pepper

METHOD

1.Place ingredients in a bowl.  Shake cranberry juice and olive oil together in a lidded jar with freshly ground black pepper. Pour over salad.   Leave for an hour in fridge before serving.
