CRUNCHY CHICKEN SALAD WITH PEANUT DRESSING

 This crunchy salad provides 2 meals, one as a meal-in-a-bowl for dinner and a salad to take to work for lunch.

1 cooked chicken breast (diced)

2 cups washed lettuce or washed baby spinach (torn into pieces)

1/2 small onion (sliced finely)

2 mushroom caps (sliced finely)

1 cup celery (sliced finely)

½ green/red  capsicum (sliced very finely)

1 carrot (grated)

METHOD

1.Mix together all salad ingredients in a bowl.  Pour Peanut Dressing over portion you wish to eat and serve.

Makes 2 servings
