Yoghurt makes some of the best sauces ever.  Make sure you taste as you go.

4 tbspns low fat yoghurt

1 tspn lime or lemon juice

small amount of crushed chillis  (use a mortar and pestle or even put chopped chillis in a cup and crush with the back of a spoon) I use about a quarter of a teaspoon.

small amount of sugar (I use a quarter of a teaspoon)

salt and pepper if required


1. Mix yoghurt with lemon or lime juice and beat with a small whisk until smooth.

2.  Add small amount of sugar and chilli and taste.

3.  Add more sugar, lime or lemon juice and chilli to suit your taste.

4.  Add salt and pepper if required.

This sauce is great with all types of fritters, fishcakes and potato cakes.

Variations:  Use wasabi instead of the chilli.
