WARM POTATO & TUNA SALAD

1 potato cut into quarters

1 cup green beans, trimmed and cut into thirds

½ tin of tuna in brine (drained)

1 hardboiled egg

METHOD

1.Cook potato in boiling water for 15 minutes.  Put beans in boiling water for 2-3 minutes until cooked. Plunge into cold water and then drain.   Boil egg until hardboiled – 8 minutes.

2. Cut cooked potato into smaller pieces.  Cut beans into thirds. Peel and quarter egg. Place all these warm ingredients together in a bowl.

3.Pour over French Dressing and toss gently then serve

Serves 1

Variations: Almost any green vegetable will do – peas, zucchinis etc
