TUNA FISH CAKES

2 large potatoes cut into quarters

1 egg

½ 450 g can of tuna

Flour for coating

Salt and pepper to taste

2 tbspns oil, butter or margarine for frying

3 spring onions finely chopped

METHOD

  1. Boil, steam or microwave potatoes until tender.
  2. Mash in a bowl until smooth. Add salt and pepper to taste.
  3. Drain tuna and flake into pieces and add to potatoes with beaten egg and spring onions. Mix and shape into patties. Coat into flour.
  4. Place patties on oven tray and refrigerate 30 minutes.
  5. Heat oil in frying pan and shallow fry patties until browned lightly and heated through. 
  6. Drain on absorbent paper.

Serve with salad or steamed vegetables and with sweet chilli sauce.

Makes 8 cakes

Additions:  finely chopped chillies
