SPINACH ORANGE & CUCUMBER SALAD

 3 cups washed and dried baby spinach (loosely packed)

 ½ – ¾ cucumber (peeled and sliced finely)

 1 orange (peeled and segmented)

½ red onion (sliced finely)

 1 quantity Citrus Dressing

 METHOD 1. Place spinach in a salad bowl. Add sliced cucumbers and sliced onion.

 2. Segment orange. Peel orange and remove all white pith. Use a sharp knife to cut down between the membranes dividing the orange segments. Place released segments in the salad bowl.

3. Remove the quantity of salad desired from the bowl and dress the salad with Citrus Dressing as you use it.

Makes 2 separate meals
