CREAM CHEESE ICING

1 ½ cups icing sugar

½ cup low fat cream cheese

 1 tbspn lemon juice

 METHOD 1. Mix the icing sugar with the cream cheese with a fork adding the lemon juice. Mix to a smooth paste.

 2. Apply to a cool cake. Variation: If using a fresh lemon grate the lemon rind into the icing as well as the juice.
