4 BEAN RANCH EGGS

1 cup 4 Bean Salad Mix

1 tortilla or flatbread

1 vine ripened tomato (chopped)

1 egg

1 tspn oil

1 tspn brown sugar (optional)

1 tbspn grated cheese

Salt and pepper

METHOD

  1. Heat the oil in a non-stick frypan until  hot.  Place the chopped tomato and brown sugar in the pan and fry quickly about 1 minute to caramelize the tomato.
  1. Add the 4 Bean Salad Mix to the frypan and fry another minute or two until the liquid evaporated and mixture is thick. Add salt and pepper to taste.
  1. Poach an egg.
  1. Place a flatbread or tortilla on a plate.  Place the 4 Bean Mix on top of the flatbread or tortilla and then the poached egg on top.  Sprinkle cheese on top and place under the grill until cheese is melted.

Variations:  Chop up some fresh green beans and chopped capsicum and fry with the tomato until tender.
