JACKET POTATOES

2 medium potatoes or 1 large potato (about the size of your fist)

2 tbspns grated cheese

1/2 rasher of bacon chopped and cooked until crispy

1 spring onion chopped finely

1 tbspn low fat sour cream (or low fat cream cheese)

1 tbspn lemon or lime juice (optional)

Salt and pepper to taste

METHOD

1.  Wash potato well and prick holes in it with a skewer or similar.  Bake in a 200 C oven for 45 minutes to 1 hour.

2.   Slice off the top of the potato.  Chop up the potato inside the jacket and pour over lemon or lime juice.  Sprinkle over salt and pepper.  Layer grated cheese, sour cream or creamed cheese, bacon pieces and spring onion on top of the potato  in that order.   Close potato lid and serve with a Green Salad.

MICROWAVE VERSION.

1.  Prick cleaned potato and place in microwave for 3 minutes for medium potatoes and 5 minutes for a large potato.

2.   Then place in an oven preheated to 200 C for 25 – 30 minutes until the potato is soft to the touch.

3.  Dress the potato as described above and serve.
