CHEESE, HAM & SPRING ONION OMELETTE

1 tbspn butter

2 eggs

2 tbspns grated cheese

2 slices ham shredded

1 spring onion finely chopped

salt and pepper to taste

METHOD

1. Whisk eggs and a  pinch of salt in a small bowl.

2.  Melt butter in a frying pan over moderately low heat.

3.  Add eggs and pull omelette mix to the center of the frypan with an egg slice.  Go all around the omelette doing this.  Cook for 1 minute (altogether including the pulling the omelette to the centre) or until almost set.  Sprinkle half the omelette with cheese, ham pieces and spring onions.   Fold omelette over.  Remove from heat and allow to continue to cook on in the pan until the cheese melts.

4.  Turn out onto a warm plate and serve.

Additions:  You can add almost anything to the inside of the omelette such as fried mushrooms, bacon, cooked tomatoes, basil etc
