GREEN VEGE AND HAM PASTA

Apologies to Dr Seuss.  This is a great recipe for using up leftover green vegetables as any kind can be used.

1 cup short pasta eg bowties, rigatoni etc

1/4 cup light sour cream

1/2 cup cheese

1 cup mixed green vegetables, chopped into bite sized pieces  (or just one kind of green vegetable if that is all you have to hand)

1/4 cup ham (sliced and then diced)

nutmeg to taste (optional)

1 tbspn butter or oil

METHOD

1.  Cook pasta in boiling water about 13 minutes until tender to the bite.  Drain in colander.

2.  While pasta is cooking melt butter or oil  in pan on medium heat.   Add vegetables to pan and sti-fry until tender (about 3-5 minutes depending on how you like them – do not burn)

3.  Take pan from the heat and cool slightly.  Stir through cooked pasta and ham then stir through sour cream and cheese.

4.  Grate over fresh nutmeg if you have it, otherwise just grate over cracked black pepper and salt.

Serve with Green Salad.
