CARROT SALAD

This famous French salad is the essence of simplicity.  You can find the French version here.

4 carrots (peeled and grated)

1 tbsp oil

1/2 teaspn sugar

juice of one lemon

finely chopped mint (if you have it)

a small amount of crushed garlic

grated black pepper

salt to taste

METHOD.

1.  Mix oil, sugar, lemon juice, garlic, salt and pepper and mint in a tightly lidded jar and shake until combined.

2.  Pour dressing over carrots and serve straight away.
