APPLE CINNAMON PANCAKES

The  ingredients list for these pancakes is a little loose as we all like different things in these breakfast champions!

1 cup plain flour

2 tspns baking powder

1 – 2  tspn cinnamon

3/4 – 1 cup  cup skim milk (depending on how thick you like your pancakes)

1 egg

1/2 – 1  cup grated apple

small amount of oil for frying

1 lemon

sugar for sprinkling on top

METHOD

1.  Sift flour and baking powder into a bowl.  Make a well in the centre.  Break the egg into the centre of the well then mix, pouring in the milk while mixing. You should mix from the centre to the edges of the bowl.

2.  Leave batter to sit for 15 minutes.

3.  Heat oil in a  pan on moderate heat and pour in 2/3 of a cupful of mixture at a time.  Turn over when looks light brown on the underside and cook until other side is light brown.

Serve with a squeeze of lemon juice and a sprinkling of sugar.

Health Tip:  Replace plain flour with wholemeal.  Leave skin on apple for more fibre.
