Silver dollar pancakes are only about 5 to 7 cm wide.  They can be made most easily by dropping a tablespoon of batter onto a hot frypan.

1 cup flour

1/2 tspn baking powder

1 egg

1 cup milk

oil, or margarine to fry with


1.  Mix the flour with the baking powder in a bowl.

2.  Make a well in the centre of the flour and drop the egg in the well.

3.  Whisk the egg into the flour with a fork while adding the milk to the centre of the bowl.   Keep stirring incorporating the flour into the milk/egg mix as you whisk round the bowl.  Don’t overstir it,  just try to get all the flour mixed in.

4.  Allow the mixture to stand for 1/4 hour.

5.  Heat a frypan on a moderate heat  with oil until some flour dropped into the oil sizzles.  Drop tablespoons of the mixture into the pan. Once bubbles show in the surface of the pancakes, turn over to the other side.  Cook another minute or two until both sides are golden.

Serve with maple syrup, caramel sauce or fresh fruit and cream.
