1/2 rasher of long middle bacon

3 slices tomato



1.  Fry the bacon on top of high heat until it is crispy and brown.

2. Toast two slices of home-made bread.

3. Butter toast.  Place a layer of lettuce followed by layer of tomato slices.  Season well with salt and pepper.  Place bacon on top.  Pour bacon fat from frypan onto sandwich.  Place other slice of toast on top.

Additions:  Add 1 tspn mayonnaise to toast before making sandwich.  You can add a poached egg to the sandwich if you like.
