VEGETARIAN RICE

1/2 cup rice

1 tbspn vegetable oil

1 clove garlic

3 spring onions chopped finely

5  mushrooms sliced

1 diced carrot

1/4 capsicum diced

1/2 cup peas

METHOD

1. Cook the rice according to instructions on packet.

2. While the rice is cooking heat the oil in a frypan and cook the garlic, onions, mushrooms, carrots, capsicum for a few minutes until they begin tio soften, then add peas and continue for a minute longer.

3. Season well with salt and pepper and keep warm until the rice is cooked.

4. When the rice is cooked, drain and stir the vegetables through the rice immediately.

Serve with sweet chilli sauce or soy sauce if you have it.
