POTATO & BACON PIE

This is an old family recipe.  Sometimes it is great to have something very simple.

1 medium potato sliced into rounds

1/2 small onion sliced finely  into rounds

1/2 a long middle rasher of bacon cut up into 2 cm strips

ground black pepper

2 tbspns milk

METHOD

1. Place a row of sliced potatoes in the bottom of a buttered ovenproof dish for one.

2. Place a row of sliced onions on top of the potatoes then a row of sliced and cut up bacon rashers.

3. Keep going with these rows until you have filled the dish.  Try to finish on a row of sliced potatoes.

4. Pour over 2 tbspns milk.  (Big British tablespoons)

5. Cover the dish with foil and cook 20 minutes in a hot oven.  Take off the foil and finish another 5-10 minutes until the top is brown and crispy.

Additions:  Place grated cheese on top if you want to embellish it.

This is best served with Worchestershire Sauce but hot chilli sauce is also nice.
