PIZZA WITH SCONE BASE

2 cups flour

4 teaspns baking powder

3 tbspns butter or margarine

1 egg lightly beaten

1/2 cup milk

TOPPING

salami or  bacon

red or green capsicums

mushrooms

grated cheese

METHOD

1.  Mix the flour and baking powder in a bowl.  Using fingertips rub in butter until mixture resembles fine breadcrumbs.

2.  Make a well in the centre of the flour mixture and using a knife, fold in egg and enough milk to make a soft dough.

3.  Turn dough only lightly floured surface and knead lightly with fingertips until smooth.  Using the heel of your hand press dough out lightly (no higher than 1 cm) into a greased tin baking pan (lamington tin sized) or baking sheet.

4. Top with 1/2 cupful to 3/4 cupful of passata (Italian bottled tomato sauce- you can use the rest for soup) and spread all over the dough.  Then top with salami rounds or finely chopped bacon pieces, finely chopped capsicum, finely sliced mushrooms and last of all grated cheese.

5.  Bake in moderately hot oven for 15-20 minutes until base is cooked and golden, meat is cooked and cheese has melted.
