3 tbspns butter
3 tbspns plain flour
1 1/2 cup grated cheese
white pepper and salt to taste
3 cups of milk
3 cups spiral pasta (or any small pasta or macaroni)
additional 1/2 cup grated cheese


1. Place pasta in pot of boiling, salted water and cook until it still tastes firm to bite it. Drain in colander and place in buttered 4-person ovenproof dish and keep it warm.

2. Melt butter in pot on moderate heat. Then gently stir in plain flour. Keep stirring for 1-2 minutes then gradually add milk, stirring all the time until mixture thickens.  Be patient it takes time for the flour to cook and the mix to thicken.  If you want this to happen quicker use warm milk.

3. Take off the heat, add cheese and stir until cheese is all dissolved. You can add a pinch of mustard or cayenne or a pinch of nutmeg to the mix here if you like. (More if you like it hot).

4. Fold the cheese mixture through the pasta/macaroni in the buttered ovenproof dish.

5. Sprinkle more cheese on the top of the dish. Place under the grill until the top is brown and cheese is melted.

Makes 4 helpings
