1 large head of broccoli

2 tbspn butter

2 tbspn plain flour

1 cup milk

1/3 cup cheddar cheese

salt and pepper to taste


1.  Cut broccoli into small florets and cook until just tender.  Place in the bottom of a heatproof dish for one.

2. Heat 2 tbspns of butter in small pot.  Add 2 tbspns of flour.  Stir over low heat for 1-2 minutes.  Add 1 cup milk gradually, stirring all the time.  Stir constantly over medium heat until mixture boils and thickens.  Use warm milk if you want to make this process quicker.

3.  Take off the heat and stir in 1/3 cup grated cheddar cheese.  Keep stirring until melted then pour over the hot broccoli and serve.
