1 cup cabbage thinly sliced or grated (red or green cabbage)

1/2 cup grated carrot

1 small onion grated

1/4  red capsicum cut into thin strips


1.  Combine vegetables in a bowl with Sour Cream Dressing

Additions:  Add finely shredded fennel; add finely shredded snow peas; add some sultanas or pieces of orange to add some sweetness.


4 tbsps sour cream

1 tbspn lime juice (or lemon juice)

freshly cracked black pepper to taste


1. Shake ingredients in a lidded jar.  Then pour contents over salad vegetables.

Substitutions:  put 1 tbspn orange juice and rind of 1/2 orange into dressing instead of lime juice.
