BREAKFAST WITH THE LOT

1 slice bacon

2 eggs

1/2 cup mushrooms

2 tomatoes quartered

6 baby spinach leaves

METHOD

1.  Fry bacon in frypan.  Remove and place on kitchen paper. Fry tomatoes in frypan for 10 minutes then add mushrooms and spinach leaves  to other side of pan and quickly stir fry until tender.  

2.  Poach eggs and serve on top of bacon/tomato /spinach mixture.   Serve with toast.
