2 eggs

1 tbspn chopped green herbs (if you have them)

2 tbspns butter

1tbspn sour cream

2 tbspns grated cheese

Sliced tomato to serve


1. Whisk eggs, cream and pinch of salt in a small bowl.

2 Melt butter in a frying pan over moderately low heat.

3.  Add eggs and pull omelette mix to the center of the frypan.  Go all around the omelette doing this.  Cook for 1 minute or until set.  Sprinkle with cheese.  Fold omelette over.  Cook for 1 minute more.  Sprinkle with green herbs if you have them.  otherwise serve at once with tomato on the side.

Additions:  You can add almost anything to the inside of the omelette such as fried mushrooms, bacon, cooked tomatoes, basil.

Variations:  Leave out the sour cream if you like.
