1 tin Mexican beans

2 tomatoes peeled and chopped

1 slice bacon chopped into pieces

1 small onion chopped

1 clove of garlic, finely chopped

olive oil for frying


1. Fry bacon in a large frypan.  Add onion and garlic and fry about 5 minutes until onions are caramelized. (golden brown and caramel looking).

2 Add beans (including liquid)  and chopped up tomato and cook until tomato has broken down and most liquid has evaporated.  Stir regularly while cooking.

Serve with Huevos Rancheros or Tortillas

Additions:  You can add 1 tspn of brown sugar and a pinch of cinnamon to the onion and garlic  if you like but I prefer it without.
