1 skinless chicken thigh

2 tbspns lime juice

1/4 cut up chilli

1 small onion

1/4 red or green capsicum

olive oil for frying

good pinch oregano

(pinch cinnamon if you choose)

2 tortillas for serving


1.  Cut the thights into 1cm wide strips and place in a bowl.  Add lime juice, oregano and cinnamon.  Cut up chilli into small pieces and add.  Mix thoroughly and allow to marinate 30 minutes.

2. Cut onions into thin slices, and thinly slice the pepper into strips.

3.  Heat oil in frying pan.  Add chicken and marinade and strir-fry 5-6 minutes then add peppers and onions and cook another 3-4 minutes. 

4.  Wrap mixture in tortillas and top with Guamacole and sour cream and serve.

Makes 2

Additions:  You can put 1 tbspn of brown sugar in the marinade if you have it but I prefer to leave it out.
