1 poached egg

1 flat bread about the size of a bread and butter plate eg Chinese Green Onion Pancake, tortilla or wrap.

1 large tablespoon Fresh Tomato and Chilli Sauce (re-heated)

1/2 cup Tomato Salsa

1 tblspn cheese


1. Place the flatbread on an oven tray.  Place Fresh Tomato Chilli Sauce on top of the flatbread.  Place a poached egg on top of the sauce and sprinkle cheese on top.

2.  Place in a hot oven until the cheese melts.  Take out of the oven and place on a plate.  Serve with Tomato Salsa on the side and some yoghurt or sour cream if you have it.

Additions: Add some Mexican refried beans on top of the Tomato Chilli Sauce
