Ordinary old curry powder will never go out of style because of this great sandwich filling.

3 eggs

1 tspn red, white or brown onion chopped finely

1 tspn creamy salad dressing (add more if mixture is too dry)

curry powder to taste


Boil eggs following the How To –  Cook a Hard Boiled Egg.   When peeled place in a bowl with chopped onion, salad dressing and curry powder. Mix until a satisfactory consistency.  Keep in the refrigerator in the cling filled covered bowl. 

NOTE:  This only makes a very small amount.  Remember we are being frugal.  It should make enough to spread on 3 bread rolls. If you want to make a larger amount just double the quantities.

Additions:  You can add finely chopped parsley to the mix; add finely chopped spring onions; Replace the salad dressing with yoghurt or sour cream.
