RICE SALAD WITH CURRIED YOGHURT DRESSING

1 cup cooked rice

1/4 capsicum finely diced

1/2 carrot finely diced

1/2 spring onion finely sliced

4 beans finely diced

1/4 orange finely chopped

METHOD

Mix all ingredients in a serving bowl.  Pour over Curried Yoghurt Dressing  and mix and allow to sit in fridge for an hour before serving.

Additions:  You can add finely chopped pineapple, sultanas, mushrooms, sweet corn kernels or sprouts
