VEGIE RICE CAKES

1 cup cooked rice

1/2 to 1 cup cooked vegies cut into small pieces

2 beaten eggs

½ cup grated cheese

2 heaped tbspn flour

1 small finely chopped onion

coriander/parsley or any other green herb

flour to coat patties

oil, butter, margarine for frying

METHOD

  1. Mix up ingredients in a bowl.  Form into patties and coat in flour.

      2.   You can drop these into an oiled, heated pan and then flatten them into cakes or

      3.      Put them on a plate in the refrigerator for 20 minutes or so to firm up.    Cook rice cakes for three minutes each side until golden.

Variations: Any cooked vegetables will do even roasted ones. If you don’t have coriander any green herb will do.
